For over 1,000 years, villagers of the Jura Massif in Eastern
France have lovingly crafted Comté, a cheese known
for its complex flavours. 83 natural aromas have been
identified, ranging from nutty and buttery to floral and
fruity. The final taste is influenced by factors such as
season, altitude and the expertise of the affineur.

BERKSHIRE TROUT

Berkshire Trout’s heritage dates from 1907 when the farm near
Hungerford started restocking rivers and fisheries with brown
and rainbow trout across southern England. Lucy and Jon
Handley took over in 2020 and, guided by the sustainability of
the farm, founded the food side of the business. The online shop
sells a range of fresh, cold and hot-smoked trout products. All
the fish are grown on the extensive and low-stocked farm, which
is fed by the clear waters of the River Dun. The trout are given as
much space as they need to develop and grow, as they would do
in the wild, which provides an enhanced and delightful flavour.
